There are many foods with anti-atherosclerotic properties. Foods rich in vitamin C and vitamin E exert anti-atherosclerotic effects. Additionally, foods high in potassium and calcium also demonstrate certain anti-atherosclerotic benefits. Fresh vegetables and fruits are rich in vitamin C—and vitamin C–rich foods are often also high in potassium. Calcium-rich foods—such as milk, eggs, and dried shrimp—provide abundant calcium.

Statistical data indicate that individuals with irregular lifestyles, those who smoke and drink alcohol frequently, and those who are overweight or obese have a higher incidence of cardiovascular diseases. Atherosclerosis is one of the most common conditions in this category. So, what foods help prevent atherosclerosis?

Foods That Help Prevent Atherosclerosis

Many foods possess anti-atherosclerotic properties. Foods rich in vitamin C and vitamin E are particularly effective in preventing atherosclerosis. Additionally, foods high in potassium and calcium also offer some protective benefits against atherosclerosis. Fresh vegetables and fruits are excellent sources of vitamin C—and many of these are also rich in potassium. High-calcium foods include milk, eggs, and dried shrimp. Vitamin E–rich foods encompass a variety of fresh vegetables and fruits, fish oil, and soybeans. General dietary principles for preventing atherosclerosis include consuming light, low-fat meals; avoiding overly sweet or salty foods; reducing intake of cholesterol and animal fats; eliminating unhealthy habits such as smoking; limiting alcohol consumption; and maintaining a healthy body weight.

For patients already diagnosed with atherosclerosis, dietary modifications can significantly aid disease management. Daily meals should emphasize vegetables and high-protein foods. Seafood—including fish and shellfish—may be consumed in moderation. Intake of high-fat and greasy foods should be minimized.
