Introduction
In general, blood glucose levels are higher one hour after a meal. Under normal circumstances, carbohydrates from food are quickly digested and absorbed, causing blood glucose levels to rise rapidly about one hour after eating. Subsequently, insulin is released and acts on cells to promote the uptake of glucose into cells, thereby lowering blood glucose levels. As a result, blood glucose levels two hours after a meal are usually relatively lower and close to fasting blood glucose levels.
