How to eat mung beans for effective detoxification and reducing internal heat

Introduction
Under normal circumstances, mung beans are best consumed by soaking in water, making soup, cooking porridge, serving cold, or preparing pastries, as these methods offer good detoxifying and heat-clearing effects. Mung beans have the functions of clearing heat to relieve summer heat and detoxifying the body. They can also help reduce internal body heat, effectively alleviating various discomforts such as stomach heat, intestinal dryness, and mouth or tongue ulcers. However, it is important to consume them in moderation to avoid potential adverse effects.

Generally, mung beans are most effective for detoxification and reducing internal heat when consumed by soaking in water, making soup, cooking porridge, preparing cold dishes, or making pastries. Specific methods are as follows:

1. Soaking in Water

Add alkaline powder (edible sodium carbonate) to water and bring it to a boil. Pour the boiling water into a container with mung beans, stir with a spoon, then discard the water. Transfer the washed mung beans into a thermos, pour in freshly boiled water, close the lid tightly, and soak for 2–3 hours. Once the mung beans become soft and mushy, they can be poured out and eaten directly. This method helps clear heat, relieve summer-heat, and detoxify the body.

2. Boiling Soup

Wash the mung beans and soak them in water for 1 hour beforehand. Wash red dates and goji berries and set aside. Place the mung beans and red dates into a pot, add sufficient water, bring to a boil over high heat, then reduce to low heat. Simmer until the mung beans burst open and the red dates become soft and tender. Add goji berries and rock sugar, and continue cooking for another 5 minutes. Both red dates and goji berries have nourishing properties; when combined with the heat-clearing and summer-heat-relieving effects of mung beans, this soup offers certain health benefits.

3. Cooking Porridge

Rinse rice thoroughly with clean water and remove impurities from the mung beans, washing them well. Place the mung beans in a pot, add water, bring to a boil over high heat, then reduce heat and simmer for about 40 minutes until the mung beans are soft and mushy. Then add the rice and cook over medium heat for approximately 30 minutes, until the rice grains burst open and the porridge becomes thick and creamy. After cooling slightly, add rock sugar and it is ready to serve. Mung bean porridge effectively replenishes essential nutrients in the body and helps alleviate symptoms caused by excessive internal heat.

4. Cold Salad

Soak mung beans overnight, then remove their skins and rinse clean. Boil them in a pot until tender. Blanch shredded carrots separately and set aside. Place the cooked mung beans and carrots in a bowl, add minced garlic, chopped green onions, salt, vinegar, and soy sauce. Finally, sprinkle with chili powder and pour hot oil over the top. Mix well before serving. This dish also provides supportive detoxifying and heat-clearing effects.

5. Making Pastries

Remove the skins from mung beans and soak them in water for at least 2 hours. Cook them in a pot until fully softened, then drain and mash into a paste. Add butter and granulated sugar, and continuously stir-fry over low heat until the mixture becomes thick and sticky. Once cooled, press the mixture into molds to form shapes. Mung bean cake has heat-clearing and detoxifying properties, with a sweet and pleasant taste, making it suitable as a dessert or snack.

In daily life, it's important to moderate intake of mung beans. Consuming too many at once may damage gastrointestinal mucosal tissues, leading to symptoms such as abdominal pain, bloating, nausea, and vomiting. A balanced and regular diet is recommended to support overall health.
