How to store Sophora flowers for a long time

Wash and dry the locust flowers thoroughly. Place them into a sealed bag or airtight container, squeeze out the air, and store in the refrigerator's chilling compartment at a temperature of 0-5℃. This method allows the locust flowers to remain fresh and retain their flavor for 1-2 weeks. For longer storage, drain the washed locust flowers completely, divide them into portions, place them into sealed bags, squeeze out the air, and store in the freezer at approximately -18℃, where they can be preserved for several months.

Honey locust flowers can be preserved for a relatively long time using methods such as refrigeration, freezing, drying, salt-pickling, and processing into jam.

1. Refrigeration: Wash and air-dry the honey locust flowers, place them into sealed bags or airtight containers, squeeze out the air, and store them in the refrigerator's chilling compartment at 0–5°C. This method allows the flowers to remain fresh and maintain good flavor for 1–2 weeks.

2. Freezing: After washing and draining the honey locust flowers thoroughly, divide them into portions, place them into sealed bags, squeeze out the air, and store them in the freezer at approximately -18°C. They can be stored for several months and can be used directly in cooking without thawing.

3. Drying: Evenly spread the honey locust flowers on trays and place them in a drying oven set at 50–60°C until the moisture content drops below 10%. Once dried, store them in sealed containers in a cool, dry place, where they can be preserved for more than six months.

4. Salt-pickling: First lay a layer of salt at the bottom of a container, then add a layer of honey locust flowers. Repeat this layering process, finishing with a top layer of salt. Seal the container tightly and store it in a cool place. Before use, rinse off the salt thoroughly with clean water. This method allows the flowers to be stored for several months.

5. Processing into jam: Wash and crush the honey locust flowers, add an appropriate amount of sugar and lemon juice, and slowly cook the mixture into a jam. While still hot, transfer the jam into sterilized, airtight jars, invert the jars to cool, and then store them in the refrigerator. This preserves the flowers for several months and the jam can be used as a spread for bread and similar items.

Regardless of the preservation method used, it is important to regularly check the condition of the honey locust flowers. If any signs of spoilage are detected, discontinue use immediately.
