Can fresh shiitake mushrooms be eaten after a few days of purchase?
If fresh shiitake mushrooms have been stored under low-temperature refrigeration, sealed and protected from moisture, and show no signs of spoilage such as rotting, mold, or unpleasant odors, they are generally still safe to eat several days after purchase. However, if improperly stored or showing any signs of deterioration, they should not be consumed. If symptoms such as vomiting or diarrhea occur after consuming疑似 spoiled shiitake mushrooms, medical attention is recommended promptly.

Fresh shiitake mushrooms have high water content and tender texture, making them prone to bacterial and fungal growth at room temperature, leading to spoilage. They should typically not be stored at room temperature for more than 1–2 days. When refrigerated at temperatures between 0–4°C and sealed in airtight containers or storage bags to minimize moisture loss and cross-contamination, their shelf life can extend to 3–5 days, and sometimes even longer if well preserved.
To determine whether fresh shiitake mushrooms are still edible, examine their appearance and smell. If the surface feels slimy, has spots or visible mold, if the cap edges appear wilted or decaying, or if there is an unusual odor such as sourness or mustiness, they should not be eaten—even if stored for only a short time—as this may cause gastrointestinal discomfort or even food poisoning in severe cases.
