Differences Between Raw Licorice Root and Honey-Processed Licorice Root
“Raw licorice root” refers to unprocessed licorice root, whereas “honey-fried licorice root” denotes licorice root that has been stir-baked with honey. What, then, are the differences between raw and honey-fried licorice root?
Differences Between Raw and Honey-Fried Licorice Root
Raw and honey-fried licorice root differ in their processing methods. Raw licorice root consists solely of the root and rhizome of the plant, which are sliced and used directly without further processing. In contrast, honey-fried licorice root is prepared by stir-baking raw licorice root with honey, resulting in a slightly sticky texture after processing. Their pharmacological properties also differ: honey-fried licorice root exhibits a sweet and neutral nature, primarily functioning to tonify and nourish—specifically strengthening the Spleen and Stomach, restoring Yang and regulating the pulse, and reinforcing Qi. It is mainly indicated for Spleen- and Stomach-Qi deficiency manifesting as fatigue or cardiac symptoms such as palpitations and irregular or intermittent pulse (e.g., arrhythmias). In addition to its tonifying effects, raw licorice root possesses heat-clearing and detoxifying, phlegm-resolving and cough-suppressing, and spasm-relieving and pain-alleviating properties.

Raw licorice root exerts heat-clearing and detoxifying, phlegm-resolving and cough-suppressing, and analgesic effects. Honey-fried licorice root is prepared by stir-frying raw licorice root with honey; compared with raw licorice root, it demonstrates superior warming and tonifying actions, making it especially suitable for patients with Spleen- and Stomach-deficiency. However, its heat-clearing effect is weaker than that of raw licorice root. As honey-fried licorice root is processed from raw licorice root and honey, it excels at warming and strengthening the Spleen and Stomach, thus being particularly appropriate for individuals with Spleen- and Stomach-deficiency. Raw licorice root, with its pronounced heat-clearing and detoxifying action, is indicated for conditions involving excess Heat—such as sore throat—whereas its heat-clearing efficacy diminishes following honey-frying.

The term “relieving acute spasms and pain” refers to using licorice root for acute pain or acute symptoms. Raw licorice root may be selected for such indications; however, the choice between raw and honey-fried licorice root should be guided by the patient’s underlying pathogenic mechanism—whether it involves Cold or Heat.
