Antioxidants are generally substances that inhibit the harmful effects of oxygen, preventing or delaying food oxidation and thereby enhancing food stability and extending shelf life. However, accidental ingestion may trigger diseases and, in severe cases, even lead to death; therefore, their use must be strictly avoided.
