Nitrites pose numerous health risks. Nitrites are inorganic compounds; prolonged consumption of large amounts may harm the human body, leading to symptoms of poisoning—such as dizziness, headache, chest tightness, and dyspnea. Ingestion of just 0.3–0.5 g can cause nitrite poisoning and may even increase the risk of cancers, including esophageal and gastric cancer. Foods particularly high in sodium nitrite include cured or pickled foods and leftover meals stored overnight.
