Individuals with elevated creatinine and blood glucose levels may consume cornmeal in moderation. Creatinine is a metabolic waste product, and elevated creatinine levels primarily indicate kidney damage—such as that occurring in diabetic nephropathy or polycystic kidney disease. Hyperglycemia often results from excessive renal reabsorption of glucose or abnormal glucose metabolism. Dietary management for elevated creatinine and blood glucose focuses on restricting excessive intake of carbohydrates, protein, fluids, and salt. Cornmeal contains relatively high carbohydrate content; therefore, it may be consumed in moderation when blood glucose is well-controlled.
