The primary toxic effect of this toxin is liver damage, and its carcinogenic mechanism is highly complex, involving interference with normal cellular metabolic processes, leading to DNA damage and genetic mutations. Epidemiological studies have shown a strong correlation between dietary intake of aflatoxin B1 and mutations in the TP53 gene as well as the incidence of liver cancer. This association is particularly pronounced among individuals infected with hepatitis B virus (HBV). Therefore, to prevent serious diseases such as liver cancer, it is essential to avoid consuming foods that may contain aflatoxin B1 and to ensure food safety.
