The tannic acid in persimmons may combine with starch to form substances that are difficult to digest, potentially causing gastrointestinal problems. 3. High-protein foods: Proteins in high-protein foods (such as seafood including crabs, fish, and shrimp) can easily combine with tannic acid in persimmons to form precipitates that are difficult to digest, possibly increasing the burden on the gastrointestinal tract. 4. Foods rich in minerals such as calcium, zinc, and iron: Tannic acid can combine with these minerals to form compounds that are difficult for the body to absorb, affecting the absorption of these minerals. In addition, persimmons should not be eaten on an empty stomach. Persimmons contain significant amounts of tannic acid and pectin, which can, under fasting conditions, form hard masses of varying sizes under the action of gastric acid.
