In general, pregnant women can eat amaranth, but should consume it in moderation.

Amaranth is rich in nutrients such as folic acid, iron, calcium, and vitamin C. It can help prevent fetal neural tube defects, anemia, promote fetal bone development, enhance immunity, and facilitate iron absorption, thus meeting the nutritional needs during pregnancy. Its dietary fiber can stimulate intestinal motility and help prevent constipation; vitamin K contributes to blood clotting function; potassium and magnesium help maintain heart and muscle health; and its heat-clearing and dampness-resolving properties may help alleviate edema during pregnancy.

Amaranth is cold in nature, and excessive consumption by pregnant women with a cold body constitution or weak spleen and stomach may cause abdominal pain, diarrhea, and even uterine contractions. Amaranth contains oxalic acid, excessive intake of which may inhibit calcium absorption and increase the risk of kidney stones. Blanching before cooking can remove some of the oxalic acid. Long-term excessive consumption may increase the metabolic burden on the kidneys, particularly for those with gestational hypertension or impaired kidney function.

Although amaranth is nutritionally rich, pregnant women should consume it in moderation. Because amaranth has a sweet and cool nature and certain lubricating properties, excessive intake may lead to diarrhea or increase the risk of miscarriage. Especially during early pregnancy, pregnant women should be cautious when consuming amaranth to ensure dietary safety.
