Can eating too much water spinach cause gout?
Eating too much water spinach (kongxincai) does not cause gout.
Whether or not gout occurs is largely related to individual metabolic factors. Diet, at most, acts only as a trigger. The primary cause of gout is the level of purines in the body. For example, in daily life, people may consume high-purine foods such as seafood, beef, and lamb. When the purines in these foods are digested, they form uric acid, which can lead to uric acid crystal deposits in joint tissues, triggering gout. However, water spinach contains only 17.5 mg of purines per 100 grams, making it a typical low-purine food. Moreover, purines are water-soluble; after blanching, nearly all purines are removed. Water spinach also lacks fructose, alcohol, or other substances that inhibit uric acid excretion. Therefore, it can be consumed freely without causing fluctuations in uric acid levels or increasing the risk of gout.
