Tofu pudding (douhua), a delicacy primarily made from soybeans, contains relatively high levels of purines in its raw form. However, its purine content is significantly reduced through careful processing. Soybeans are first ground into soy milk, which is then coagulated with brine to form tofu pudding. Since purines are water-soluble, most are removed during processing—resulting in a final product with a relatively low purine content of approximately 55.5 mg per 100 g, classifying it as a moderate-purine food. Tofu pudding not only boasts a delicate, savory flavor but is also rich in vitamin B and soy isoflavones, offering benefits for intestinal motility and skin health. Nevertheless, patients experiencing an acute gouty arthritis flare-up should temporarily avoid consuming tofu pudding due to its moderate purine content. Similarly, high-purine foods—including organ meats (e.g., liver) and meat broths—should also be avoided to prevent exacerbation of symptoms.
