Can people with high blood sugar eat spinach?

My mother’s blood glucose levels have been unstable recently, with more frequent episodes of hyperglycemia. I’m unsure whether she can normally eat spinach—can people with high blood sugar consume spinach?
Individuals with high blood sugar can consume spinach. Patients with elevated blood glucose levels should follow a light, low-glycemic-index (GI) diet, prioritizing fresh vegetables—such as celery, bok choy, carrots, cauliflower, water spinach, and cabbage—and other leafy greens. They should avoid congee (rice porridge), especially plain rice congee, as well as high-calorie foods.
