Gout patients can safely consume spinach. Spinach is classified as a very low-purine food, containing only minimal amounts of purines; therefore, gout patients can eat it without concern. Moderate consumption of spinach will not exacerbate hyperuricemia. Spinach is one of the most common everyday vegetables and is rich in nutrients, including beta-carotene and various vitamins—such as vitamin C and vitamin E—as well as minerals like calcium, iron, and potassium. It also contains antioxidants, abundant dietary fiber, folate, and other beneficial compounds. However, when preparing spinach, it should first be briefly blanched in boiling water to remove oxalic acid.
