It is best to avoid spinach entirely during the stable phase and asymptomatic periods—such as when only hyperuricemia is present—though limited consumption may be permissible. Spinach contains approximately 25–150 mg of purines per 100 g, classifying it as a moderate-to-high-purine food. A practical tip for gout patients who wish to consume spinach is to blanch it in boiling water first; this removes 50–90% of the purines, as purines are water-soluble.
