Crabs are rich in high-quality protein and trace elements, especially minerals such as zinc and copper, making them highly nutritious. However, the protein in crabs can undergo a chemical reaction when it comes into contact with tannic acid from persimmons, forming substances that are difficult to digest. Tannic acid is a type of polyphenolic compound widely present in plants, especially in persimmons. When tannic acid combines with protein, it forms a complex known as tannoprotein, which is difficult for the human body to digest and absorb, potentially accumulating in the gastrointestinal tract and causing symptoms such as indigestion, bloating, and diarrhea.

Both crabs and persimmons are considered cold-natured foods. Consuming these two foods together can easily double the internal cold effect, causing significant irritation to the stomach and spleen. This is particularly problematic for individuals with weak spleen and stomach function, as they are more susceptible to discomforts such as abdominal pain and diarrhea. Additionally, persimmons also contain saponins and relatively high levels of sugar. Saponins can promote intestinal motility, while high sugar content may stimulate excessive gastric acid secretion when consumed on an empty stomach or together with other foods, further irritating the gastric mucosa.
