Are sprouted peas edible?
I am 19 years old this year. The elders at home have always said that sprouted peas are edible. However, I saw online that some sprouted foods are edible while others are not. I would like to know whether sprouted peas can be eaten.

In general, sprouted peas are edible.
Pea sprouting is a normal natural phenomenon and does not produce toxic substances. As long as the peas have not been affected by adverse environmental conditions such as high temperature, high humidity, or contamination during the sprouting process—which could lead to bacterial growth—then the sprouted peas are safe for consumption. Sprouted peas are rich in various nutrients, including carotenoids, vitamin C, B-complex vitamins, fats, carbohydrates, dietary fiber, calcium, potassium, and more. They help boost immunity, provide essential nutrients, and offer benefits such as aiding digestion, promoting diuresis, relieving diarrhea, and reducing swelling and pain.
When cooking sprouted peas, methods such as cold mixing or quick stir-frying over high heat can be used. These methods help preserve both the nutritional content and texture of the pea sprouts. However, cooking time should not be too long to avoid nutrient loss and a decline in texture. For certain special populations, such as those with weaker digestive systems, moderate consumption is recommended to prevent discomfort.
Before consumption, it is recommended to wash the sprouted peas thoroughly, and if necessary, briefly cook them to ensure food safety. Sprouted peas are a delicious and healthy food choice, and their proper consumption can add both nutrition and enjoyment to your diet.
