Introduction
Generally, the method of making cherry-infused liquor involves steps such as washing the cherries, removing the pits, placing them into a bottle, sealing and storing it properly, and soaking. After the infusion is complete, the cherry liquor can be consumed directly in daily use, or ice cubes can be added to the liquor, or it can be mixed with other beverages such as soda water or fruit juice to enhance its flavor and taste.

Generally, the method of making cherry-infused alcohol involves steps such as washing the cherries, removing the pits, placing them into a bottle, sealing and storing properly, and soaking. The details are as follows:

1. Washing cherries: Place the cherries into a vegetable washing basket and rinse thoroughly under running water to remove surface dust and impurities. Then soak the cherries in a mild saltwater solution for 10–15 minutes, which helps disinfect and remove any residual pesticides on the surface. After soaking, rinse once again with clean water and drain thoroughly.

2. Removing the pits: This step is not mandatory, but removing the pits results in a smoother taste and avoids inconvenience when drinking. A specialized cherry pitter can be used, or alternatively, a chopstick can be used to push the pits out.

3. Bottling: First, place a layer of rock sugar at the bottom of a glass container. Then add the cherries into the container, followed by another layer of rock sugar on top. If using white spirit with high alcohol content, it is recommended to let the cherries and sugar sit for a day before adding the alcohol, allowing part of the sugar to dissolve first and resulting in a more balanced sweetness.

4. Sealing and storage: Seal the container tightly to ensure no air enters. Store the sealed container in a cool, well-ventilated, and dark location, avoiding direct sunlight and high temperatures, which may affect the quality of the alcohol.

5. Soaking: Generally, when using white spirit, the cherries need to soak for 3–6 months before the infusion is ready to drink. During the soaking period, gently shaking the container occasionally can help the cherry flavor better infuse into the alcohol.

Once prepared, cherry-infused alcohol can be consumed directly in daily use, or served with ice cubes, or mixed with other beverages such as soda water or juice to enhance its flavor and taste.
