Parasites in loaches can generally be killed.
Parasites are sensitive to high temperatures. Cooking loaches at high temperatures, such as boiling, can effectively kill the parasites and their eggs. Usually, after the water reaches a boil, continuing to boil for about one hour can more thoroughly eliminate parasites within the loaches. Therefore, when consuming loaches, it is essential to ensure they are thoroughly cooked, avoiding the consumption of raw or undercooked loaches.
In addition to cooking at high temperatures, other methods can be used to help kill parasites in loaches. For example, during preparation, the loaches can first be gutted and washed clean, then soaked in a 2% salt solution for about half an hour, which can kill some parasites. Additionally, marinating the loaches with ingredients such as table salt, Sichuan peppercorns, chili peppers, and cooking wine can also help kill parasites to some extent.
While methods such as high-temperature cooking can kill parasites in loaches, they cannot guarantee the complete elimination of all parasites and their eggs. Therefore, caution should still be exercised when consuming loaches.
