High starch content: Sweet potatoes also contain high levels of starch, which is converted into glucose during digestion and may further raise blood sugar levels. 3. High glycemic index (GI): Sweet potatoes have a high glycemic index, reaching 94, meaning they can cause a rapid increase in blood glucose levels after consumption, which is detrimental to maintaining stable blood sugar control. To maintain stable blood glucose levels, pregnant women with high fasting blood sugar are advised to choose other low-sugar, low-starch foods, such as fresh leafy vegetables, low-sugar fruits, and whole grains rich in dietary fiber.
