The reason blood glucose levels may rise in diabetic patients after consuming celery is that they simultaneously consume other high-sugar foods. When diabetic patients ingest high-sugar foods alongside celery—and given their insufficient insulin levels or reduced ability to utilize glucose—their bodies cannot effectively process the glucose from these high-sugar foods, leading to elevated blood glucose levels.

The reason blood glucose levels may rise in individuals with diabetes after consuming celery is that other high-sugar foods were consumed concurrently with the celery.

Celery is extremely low in calories, and under normal circumstances, eating celery alone does not cause a rise in blood glucose. However, if high-sugar foods are consumed alongside celery, individuals with diabetes—whose insulin levels are insufficient or whose bodies have reduced capacity to utilize glucose—may be unable to effectively metabolize the glucose from those high-sugar foods, resulting in elevated blood glucose levels.

To manage blood glucose effectively, individuals with diabetes should first consider lifestyle interventions such as regular physical activity or insulin therapy to alleviate symptoms. Daily dietary management is also essential: patients should adopt a controlled eating pattern—consuming smaller, more frequent meals—and aim to include low-carbohydrate, low-fat foods at each meal.
