Gout patients are not advised to consume pork offal, mainly because pork offal is a high-purine food. Purines are metabolized into uric acid in the body, and gout is a disease caused by excessive uric acid levels leading to deposition of urate crystals in areas such as the joints. For individuals with gout, consuming high-purine foods significantly increases uric acid levels in the body, thereby triggering or worsening gout symptoms such as joint pain and redness or swelling. Therefore, to manage their condition, gout patients must strictly limit their intake of high-purine foods, including pork offal. In addition to pork offal, other high-purine foods such as seafood, animal organs, and beef or mutton should also be avoided as much as possible. Gout patients can choose low-purine foods, such as fresh vegetables, fruits, and milk, to help maintain stable uric acid levels.
