However, unripe persimmons contain high levels of tannic acid, which has a strong astringent effect and may combine with proteins in the stomach to form indigestible precipitates, increasing the burden on the stomach. Persimmons are also categorized as a cold-natured food, and their consumption can easily cause gastric chilliness, possibly worsening symptoms such as stomach pain and bloating.
