Can people with gout eat bamboo shoots?
Disease description:
I personally love eating bamboo shoots—whether cold-mixed or stir-fried with meat—and enjoy them very much. However, my gout has flared up recently, and I’d like to know: Can people with gout eat bamboo shoots?
Bamboo shoots are not recommended during the acute phase of gout. They are classified as a moderate-purine food and should therefore be avoided by patients experiencing an acute gout attack; however, they may be consumed in moderation during the intercritical or chronic phases of gout. Bamboo shoots contain relatively high levels of oxalates. Excessive oxalate intake can inhibit renal excretion of uric acid, leading to elevated serum uric acid levels and potentially triggering gouty arthritis. Prior to consumption, gout patients may blanch bamboo shoots in lightly salted water for 5–10 minutes to reduce their oxalate and purine content, thereby minimizing their impact on serum uric acid levels.
