Under normal circumstances, pineapple can be consumed after soaking for 15–30 minutes; however, if the saltwater concentration is relatively low, the soaking time may be extended to 30–40 minutes. After soaking, rinse the pineapple thoroughly with clean water to remove residual saltwater from its surface. Note that saltwater soaking does not completely eliminate bromelain—it only significantly reduces its enzymatic activity.

Pineapple contains bromelain, an enzyme that can irritate the oral mucosa, causing discomfort such as stinging or itching, and also contains substances like oxalic acid. Saltwater helps suppress bromelain activity and break down oxalic acid, thereby reducing oral irritation. Typically, after cutting the pineapple into small pieces, it should be soaked in a saltwater solution with a concentration of 0.5%–2% for 15–30 minutes. This duration effectively reduces irritation while preventing excessive salt absorption, which could compromise the fruit’s naturally sweet and refreshing flavor.

However, if the saltwater concentration is lower, the soaking time may be appropriately extended to 30–40 minutes to maximize its efficacy. Conversely, if the pineapple is highly ripe—resulting in relatively lower bromelain activity—soaking for approximately 15 minutes may suffice. Additionally, individual sensitivity to bromelain varies; those with heightened oral sensitivity may extend the soaking time to over 30 minutes to ensure comfort during consumption.

After soaking, rinse the pineapple thoroughly with fresh water to remove residual saltwater from its surface. Note that saltwater soaking does not completely eliminate bromelain but significantly reduces its activity. If allergic symptoms—such as lip swelling, rash, or abdominal pain—occur after consuming pineapple, discontinue consumption immediately and seek prompt medical attention.
